Sicilian-style pizza is hard to pin down. In Sicily, it’s called sfincione. True Sicilian-style pizza is spongey, has a red sauce and breadcrumb topping, a light amount of cheese, and usually features anchovies. In America, Sicilian pizza is often conflated with grandma-style. Both are square, but grandma-style is thinner, denser, and unfermented. Sicilian-style, meanwhile, is thick and fluffy like focaccia.
